Here's What You'll Need:
3-4 lb pot roast
2 jars giardiniera (I usually use one regular, and one spicy)***
1 small can beef stock
French Sandwich Rolls
Mozzarella Cheese
Butter
Garlic Salt
***For those not familiar with this product, it is a glass jar filled with spiced vegetables and vinegar. At my grocery store it’s located near the pickles and olives.

Directions:
Place Roast in a large Crock pot set to low heat. Pour both bottles of giardiniera in Crock pot. Cover and let cook for eight to nine hours. In the last half hour, add beef stock and break apart roast. Meat should separate fairly easily using two forks. If not, use a knife and cut the roast into small chunks. The remaining time will help the meat to soften. Season with pepper, oregano, and minced garlic as desired.
Butter sandwich rolls, and sprinkle with garlic salt. Then place slices of Mozzarella cheese on the bread. Bake at 375 degrees until cheese has melted.
Spoon the beef mixture into the garlic cheese bread (don’t forget to add some of the juice) and enjoy.
