Today's recipe: Amazing Apple Pie

Hello My Followers! Sorry its been such a long time between posts! Things have been crazy around the Kopp Home. Before i get to the recipe I have a couple of announcements...

Alrighty! On to the recipe!

Serves:
8-10 people

Here's What You'll Need:

Pie Crust:
3 1/2 Cups flour
1 tsp Salt
1 cup Cold Shortning
3/4 cup Cold Water

Pie Filling:
8 Green Apples
2/3 cup Sugar
1/3 cup Flour
1 tbl Cinnamon
1 pinch salt

Directions:
1. Measure Flour and salt for crust, add to medium sized mixing bowl and mix together.

2. Cut Shortening into flour using a Pastry blender until shortening is about the size of peas. Make sure not to handle the dough so the shortening does not melt into the dough.

3. add 3/4 cups COLD water 1/4 cup at a time. while mixing with a fork. until dough is able to form a ball, but is still a little bit flaky. Cut dough into 2 pieces 1 a little bit bigger than the other.
NOTE: do not add too much water! This will cause the dough to be hard instead of flaky. remember not to over handle the dough, so the shortening does not melt.

4. Place Larger half of dough on a flowered surface and roll out dough until it is 3 inches wider than the pie pan. fold into quarters. place corner of dough in middle of pie pan and unfold. carefully move crust to edges of pie pan being careful not to stretch the dough. (make sure there is extra dough hanging over the edge of the pie pan.) cover other half of dough with damp towel, place in refrigerator.
NOTE: I prefer to roll my dough on a flowered pastry cloth. it makes folding the dough MUCH easier!

5. place Peeled, Cored, and Sliced Apples in a large mixing bowl.

6. In a small bowl add sugar, flour, cinnamon, salt, and mix together.

7. Mix with apples until apples are covered. spread apples into the pie pan with the bottom crust.

8. Remove dough from refrigerator and roll out dough until 1.5 inches wider than pie pan. fold into fourths, place corner of dough in middle and unfold.

9. to seal the pie crust fold the underside of the dough over the top layer, then pinch dough together making "V" shapes along the edges of the pie pan. if there is too much dough in some areas trim to a manageable length.

10. Preheat oven to 450 degrees. slice holes in the top crust to let steam escape. cover edges of pie with foil to prevent crust from burning. Bake for 30 min. remove foil and continue baking until entire crust is golden brown.

NOTE: if areas on the pie begin burning place little pieces of foil on dark areas.

Believe it or not, this is pie is actually pretty easy to make when all is said and done! hope you enjoy!
