Today's recipe: Sweet Potato Casserole

Gone are the days where your sweet potatoes come out of a can and are covered with marshmallows. This delicious casserole will have you asking for seconds and thirds. I usually eat it last because it tastes just like dessert.
Prep Time: 40 min
Cook Time: 40 minutes
Ready In: 1 hour 20 minutes
Serves: 4-6
Here's What You'll Need:
2 eggs, beaten
1/2 cup sugar
1/4 butter, melted and cooled
1 tsp vanilla
1/2 tsp salt
4 cups cubed sweet potatoes
1/2 cup brown sugar
2 Tbsp cold butter
1/2 cup chopped pecans*
*I prefer the Emerald brand Pecan Pie Pecans. It really isn't the same without it. I have tried plain pecans, and I have even tried to glaze my own pecans, but nothing can make this casserole sing like those Emerald ones!
Directions:
1. Cook sweet potatoes until soft
2. Drain and set aside
3. In a large bowl combine eggs, sugar, melted butter, vanilla and salt.
4. Stir in cooked sweet potatoes
5. Spread sweet potato mixture evenly into an ungreased 2 quart square baking dish
6. Topping: in a small bowl, combine brown sugar and flour.
7. Using a pastry blender, cut in cold butter until mixture resembles coarse crumbs.
8. Stir in pecans.
9. Sprinkle over potato mixture.
10. Bake, uncovered, at 350 for 35-40 minutes or until heated through.
