Today's recipe: Carne Asada Fajitas with Homemade Guacamole
Okay, I know its been forever since I've updated my blog... But what can I say? I've been extremely busy the past three months, so give me a break! How I chose this recipe actually has kind of a funny story to it.
Being over 100 miles from my kitchen throughout most of the summer I decided it would be a good idea to start thinking of recipes to cook when i get home. So I did what any reasonable person with an Iphone would do... I downloaded a recipe App. Not just any App. But The App of all coking Apps. The Weber Grill Recipe App. So I was looking through the recipes one night and, I came across this Steak Fajitas recipe, and I have been craving these since day 3 of my 3 months away from home! So after patiently waiting 2 months, 27 days since I found this recipe, Here it is! ENJOY!
Prep Time: 30 min.
Cook Time: 18 -23 min.
Ready In: 45- 55 min.
Serves: 4
Here's What You'll Need:
1- 1lb Flank Steak 3/4 inch thick
Extra- virgin olive oil
1 medium red onion (sliced into 1/3 inch slices)
2 medium red or green bell peppers (seeded and cut into flat sections)
4 flour tortillas
(optional )
Tabasco sauce
tomatoes
cheese
sour cream with lime
Guacamole:
2 ripe Haas Avacados
1 tbl finely chopped, fresh, cilantro
2 tsp fresh lime juice
1 tsp minced garlic
1/2 tsp kosher salt
1/4 tsp ground pepper
Rub:
1 tsp Paprika
1/2 tsp dark brown sugar
1/2 tsp pure chili powder
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp cumin
Directions:
2. In a small bowl combine rub ingredients. lightly brush the flank steak on both sides with olive oil. season steak evenly with the rub. let meat stand for 20- 30 min before grilling.
3. Brush the onion and bell peppers on both sides with olive oil. grill until tender. Cut onion and peppers into bite size pieces.
4. Grill Flank steak over high heat for 8 - 10 minutes or until your desired doneness. let rest for 3- 5 minutes.
5. To serve cut the flank steak against the grain into 1/4 inch slices. put on tortilla, with onions, peppers and guacamole topped with Tabasco sauce if desired.
My Personal Review:
Well, The Carne Asada Fajitas were definitely worth the wait! The meat was perfectly seasoned. the Guacamole was a wonderful compliment to the dish, not only as a topping but as a side as well. I did modify the original recipe by adding cheese, sour cream with lime, tomatoes, and lettuce. Over all a great, easy recipe.

3. Brush the onion and bell peppers on both sides with olive oil. grill until tender. Cut onion and peppers into bite size pieces.
